I do cook. . . sometimes.

My hard working husband deserved a nice hot meal when he got home from work so I got to thinking. J.B's dad had given us two already cooked chicken breasts so I decided to build dinner around that. 

J.B has a favorite rice casserole that is SUPER easy to make and doesn't taste bad either!

1 Can of either Cream of Mushroom or Cream of Chicken
3/4 cup of uncooked rice
1 tsp lemon juice
1 tsp basil
1 tsp oregano
1 tsp onion powder
1 tsp garlic powder
1 1/3 cup water


 


 

 


Put it in the over for 50 mins at 350 degrees. As soon as you take it out stir it ( while it's cooking the rice tends to settle) and put 1/2 cup of cheese on it. The cheese will melt right away.

It's a nice easy side dish.

I used the chicken that J.B's dad gave us and put Soy Vay on it.

 It has sesame seeds and tastes a little of ginger. It's a great. You can use it as a marinade or even as salad dressing!



Thanks to my husband's great gardening skills we have lots of lettuce! So, I went outside and picked some for our salad.

*Side Story* -  We have been battling bunnies eating stuff from our garden. My husband put up chicken wire to keep the little thieves out. Last night when I went to reach for the lettuce the whole fence starting shaking. (I about peed myself) A poor little bunny was repeatedly running into the fence trying to escape. I felt so bad for it. I went and got my husband so he could let the little guy out but, by the time we got back he had freed himself. My husband has now declared war on the bunnies. There is now wire with holes too small for these pesky little bunnies to get into. Hopefully!!

I crushed some peanuts (in a plastic baggy) with a bottom of a wine bottle to sprinkle on the salad (Since we typically have an empty wine bottle or 7 sitting around).



Then I added some amazing Raspberry Vinaigrette Salad dressing. It's my favorite!



Then, I made myself a wonderful little gem.

It's my new favorite summer drink!! I love it.

    Doritos chicken fingers and Mexican rice for us tonight. Yesterday was baked parmesan pork chops and mixed veggies. I'm actually cooking this week, too!

  3. I love wine. Seriously. I probably have atleast 1 glass a day. Does that make me an alcoholic? . . . I'll have to research that. I mean, I don't HAVE to drink the glass. I just super look forward to it ALL DAY LONG. Kinda like my treat for keeping it together all day. Yum Parmesan Pork Chops sound amazing. Can you send me that recipe?? I can tell you my husband desires most that I take care of things that need to be taken care of. lol That's just his love language.
